We love Mexican markets. There, the Mexican culture expresses itself in the form of food, art, music, and everything that can be sold/purchased. We enjoy visiting the markets every time we go to Mexico and always wish we could have something like that here. True, there are some farmers’ markets in Calgary but the prices and the folklore we found in Mexico have no equal.

Nos encantan los mercados mexicanos. Ahí, la cultura mexicana se expresa en forma de comida, arte, música, y todo lo que pueda venderse/comprarse. Disfrutamos mucho visitando los mercados cada vez que vamos a México y siempre deseamos poder tener algo así acá. Es cierto, aquí hay algunos mercados de “campesinos” en Calgary pero los precios y el folklore mexicanos son inigualables.

The main purpose of our trips to Mexico is always to relax and to spend time with the family. This trip was very much all about that. We decided not taking any long trips and just took short, one day trips and basically spent every day with Catalina's family, and we enjoyed that.

El principal propósito de nuestros viajes a México siempre ha sido relajarnos y pasar tiempo con la familia. Este viaje fué así. Decidimos no hacer ningún viaje largo y solo hicimos viajes cortos de un día y básicamente pasamos cada día con la familia de Catalina, y lo disfrutamos mucho.

Because the weather was very hot (over 30°C), we spent time in the backyard every day, just hanging out. or walking outside.

Como hacía mucho calor (+ 30°C), pasamos bastante tiempo en el jardín o caminando en la calle.

Also, ever since Catalina came to Canada (almost ten years ago), she had not been able to celebrate Mamita's birthday with the family, so we planned this trip to be there on mamita's birthday. That day we went out for breakfast to La Charamusca (delicious!) and then to the cheese and wine fair that was just starting (more food!), and finally to cut the cake at Dea's home (kept eating!), where we were planning to get wet in the backyard (but we ended up not feeling like it).

Además, desde que Catalina se vino a Canadá (hace casi diez años), no había podido estar con la familia el día del cumpleaños de mamita, así que esta vez planeamos nuestro viaje para poder estar con ella en su cumple. Ese día fuimos todos a desayunar a La Charamusca (¡delicioso!) y después a la feria del queso y del vino que estaba empezando (más comida) y finalmente fuimos a partir el pastel a la casa de Dea (a seguir comiendo), donde habíamos planeado mojarnos en el jardín con agua de la manguera pero finalmente ya no lo hicimos.

Querétaro is the most beautiful Spanish word, according to the votes of thousands of Spanish speakers around the world during the Cervantes Institute competition as part of the celebration of the E day (the day when the Spanish language is celebrated all over the world). The Cervantes Institute, presided by the King of Spain, is an Institution created by Spain to promote and teach Spanish, with several centres all over the world.

The funny part is that "Querétaro" is not in the Spanish dictionary; Querétaro, which means (in Purepecha, a native language) "island of blue salamanders" is one of the 31 states of Mexico. The capital of the State is also called Querétaro. Catalina's family live in that State so every time we visit we go to the City of Querétaro and enjoy its colonial environment and delicious food.

Querétaro es la palabra más hermosa del Español, de acuerdo con los votos de miles de personas de habla hispana durante la competencia del Instituto Cervantes como parte de la celebración de día E (el día del Español, que se celebra en todo el mundo). El Instituto Cervantes, cuyo presidente de honor es el Rey de España, es una Institución creada por España para promover y enseñar el idioma Español, con varios Centros en todo el mundo.

La parte curiosa es que Querétaro no está en el diccionario de la lengua Española; Querétaro, que significa (en Purépecha) "isla de salamandras azules" es uno de los 31 Estados de la República Mexicana. La familia de Catalina viven en ese Estado así que cada vez que vamos a visitarlos viajamos a la Ciudad de Querétaro y disfrutamos su ambiente colonial y comida deliciosa.

The wines from Queretaro have been receiving more attention lately. With several European awards, Querétaro has become a known place for good wine. During our trip to Mexico, we were able to visit La Redonda vineyard, located about 20 minutes from Tequisquiapan. We toured the vineyard, received an extensive lesson about the different types of grapes and the wine process, and tasted some red and rose wine accompanied with cheese from the same region.

Los vinos de Querétaro han estado recibiendo mucha atención últimamente. Con varios premios europeos, Querétaro se ha convertido en un lugar reconocido por sus buenos vinos. Durante nuestro viaje a México, visitamos los Viñedos La Redonda, ubicados a unos 20 minutos de Tequisquiapan. Recorrimos los viñedos, recibimos una plática interesante sobre los tipos de uvas y del proceso de fabricación de vinos, y probamos vinos tintos y rosados bastante ricos, acompañados con queso de la región.

We also visited Neolé, an artisan cheese factory where Kosher Oaxaca cheese was being prepared and packaged for the Jewish community in Mexico City (we got some amazing cheeses from that place). Within 30 minutes from Tequisquiapan, there are at least five cheese factories and two big vineyards, being Cavas Freixenet the largest and more know one. We did not visit Cavas Freixenet this time because a paella festival was taking place and what looked like the entire population from Mexico City were there, too long of a line-up.

También visitamos la fábrica de quesos artesanales Neolé, donde se estaba preparando y empacando queso Oaxaca Kosher para la comunidad Judía de la Ciudad de México (compramos quesos deliciosos en ese lugar). En un radio de 30 minutos de Tequisquiapan, se encuentran por lo menos cinco queserías y dos viñedos importantes, siendo Cavas Freixenet el más grande y conocido. En esta ocasión no visitamos Cavas Freixenet ya que estaban celebrando un festival de la paella y lo que parecía ser la población entera del D.F. hacía colas interminables para entrar.

Vizarrón, Querétaro

At about one hour drive from Tequisquiapan the town of Vizzarón can be found, surrounded by hills with mines of marble. We visited this town for the second time, just to enjoy the contrasts of a humble town, where the benches at the park and the sidewalks are made with marble and the entire community lives of marble hand crafting. We wished we could transport to Canada the beautiful tables and other articles hand made out of marble, heavy, but inexpensive and wonderful.

A cerca de una hora de Tequisquiapan, se encuentra el pueblo de Vizarrón, rodeado de colinas donde se encuentran minas de mármol. Visitamos ese pueblo por segunda ocasión solamente para disfrutar los contrastes de un pueblo humilde y sencillo, donde las bancas del parque y las banquetas de la calle están hechas de mármol y la comunidad entera vive del mármol. Quisimos poder transportar a Canadá las hermosas mesas de mármol y otros artículos preciosos hechos a mano; pesados, pero a precios muy razonables y bellísimos.

We just came back from our trip to Mexico. We spent two weeks with the family and had a great time, with very warm weather (+30°C) and very warm people, our people. We will post our pictures here eventually. We are grateful for a save and wonderful trip, and are now counting the days until the next time we can go back to Mexico. Thanks for your prayers!

Acabamos de regresar de México. Pasamos dos semanas con la familia y la pasamos súper bien, con un clima muy cálido (+30°C) y gente muy cálida, nuestra gente. Publicaremos nuestras fotos aquí eventualmente. Damos gracias a Dios por un viaje seguro y maravilloso, y estamos ahora contando los días hasta nuestro próximo viaje a México. ¡Gracias por sus oraciones!

Five years! / ¡Cinco Años!

Five years ago today we joined our lives. We can hardly believe that it has been that long; we still feel like newlyweds and we have truly enjoyed our time together, we are so thankful because only God could have allowed it to happen: we were born and raised almost 4,000 km apart; we have different religions, different languages, different cultures, different professions, etc. two completely different people; however, we have a very strong and important factor that unites us: Jesus. We both are Christian and we share the same values and principles, we share our love for our God and for our parents and family, we enjoy the same activities (such as cooking and traveling, especially traveling together). We have grown through our differences and we have learnt each other's languages (well, Paul still has to learn more Spanish) and even created our own (no, it´s not Spanglish) and now we can't imagine having separate lives, we are truly a happy couple. We love each other more than we did five years ago, and we are looking forward for many more years together. Thank you, Father for these five years! Thank you, for this blessing called marriage! Thank you for uniting us and thank you for been the centre of our lives and in the middle of our marriage! Also, we are so thankful that, unlike Kate and William, we were able to kiss at the altar!

Hoy hace cinco años que juntamos nuestras vidas. Difícilmente podemos creer que ha pasado tanto tiempo; todavía nos sentimos como recién casados y hemos disfrutado mucho estos años juntos, estamos muy agradecidos porque solo Dios pudo permitirlo: nacimos y crecimos separados por más de 4,000 kilómetros, tenemos religiones diferentes, diferentes idiomas, diferentes culturas, diferentes profesiones, etc. dos personas completamente diferentes. Sin embargo, tenemos un factor muy grande e importante que nos une: Jesucristo. Los dos somos Cristianos y compartimos los mismos valores y principios, compartimos nuestro amor por Dios y por nuestros padres y nuestras familias, y los dos disfrutamos las mismas actividades (tales como cocinar y viajar, especialmente viajar juntos). Hemos crecido a través de nuestras diferencias y hemos aprendido los lenguajes uno del otro (bueno, Paul todavía tiene que aprender más Español) y aún crear nuestro propio idioma (no, no es Spanglish) y no podemos imaginar nuestras vidas separados, realmente somos una pareja feliz. Nos amamos el uno al otro más de lo que nos amábamos hace cinco años, y ansiamos muchos años más juntos. ¡Gracias Padre, por estos cinco años! ¡Gracias por esta bendición llamada matrimonio! ¡Gracias por unirnos y por ser el centro de nuestras vidas y estar en el centro de nuestro matrimonio! Our home church has moved, and as we enjoy our new building, we wanted to remember what the old building meant to us. Saint Michael's Catholic Church is the place where we met, the church were Catalina felt at home when she moved to Calgary without knowing anybody in town; the place where Paul used to work; the place where we met our best friends and joined our two home groups. We cherish our memories and will always remember the great times we spent there.

Nuestra iglesia se cambió de dirección, y mientras disfrutamos el nuevo edificio, también quisimos recordar lo que el anterior significa para nosotros. La iglesia Católica de San Miguel es el lugar donde nos conocimos, la iglesia donde Catalina se sintió en casa cuando se mudó a Calgary sin conocer a nadie; el lugar donde Paul trabajaba; el lugar donde conocimos a nuestros mejores amigos y nos unimos a nuestros dos grupos de oración. Steven Curtis Chapman is one of our favourite Christian musicians. He has recorded over 20 albums and has won five Grammy awards and over 50 Gospel Music Awards, having sold more than 10 million albums. Together with Geoff Moore he visited our City last week and gave a concert at the First Alliance Church.

Steven Curtis Chapman es uno de nuestros cantantes cristianos favoritos. Él ha grabado más de 20 discos y ha ganado cinco premios Grammy y más de 50 premios de la música cristiana, ha vendido más de 10 millones de discos. Junto con Geoff Moore él visitó nuestra ciudad la semana pasaday dió un concierto en la Iglesia de la Primera Alianza.

His band was formed by his two very talented boys, Caleb and Will, together with another young man. The evening was very emotive as he talked about the horrible incident that took place three years ago when his beautiful 4 year old girl Maria Sue died as a result of an accident at their home (she ran to the car that her brother was driving without any of them noticing). Steven described the time of darkness and pain the family went through and how our Lord is so good and continues to heal and bring them peace. He described how hard it was to sing the songs that he had written before, when everything was beautiful such as "Yours", a song that says "It's all yours God, everything is yours, you are the maker and keeper, Father and ruler of everything, it's all yours" as well as "Cinderella" a beautiful song he wrote to his two little girls, one of them gone with Jesus now. He is able now to sing all of his songs and repeat that it all belongs to the Lord (he added a new verse to the song) and sang it during the concert as well as Cinderella and many other of our favourite songs. Very emotive.

Su banda estuvo formada por sus dos hijos muy talentosos, Caleb y Will, junto con otro jovencito. La tarde estuvo emotiva ya que él habló del horrible incidente que pasó hace tres años cuando su hermosa hija de 4 años, Maria Sue murió como resultado de un accidente en su casa (ella corrió hacia el coche que su hermano estaba manejando sin que ninguno de los dos se diera cuenta). Steven describió la obscuridad y dolor que la familia atravesó y cómo el Señor es tan bueno y continúa sanando las heridas y dándoles paz. También describió lo difícil que fue cantar las canciones que escribió antes, cuando todo era perfecto, tales como "Tuyo", una canción que dice "Todo es tuyo Dios, todo es tuyo, tú eres el creador y el cuidador, Padre y regidor de todo, todo es tuyo" así como "Cenicienta", una hermosa canción que él escribió a sus dos hijas, una de ellas ahora se encuentra con Jesús. Ahora él ya puede cantar todas esas canciones y repetir que todo pertenece al Señor (añadió un verso a la canción "Tuyo") y durante el concierto la cantó junto con "Cenicienta" y otras de nuestras canciones favoritas. Muy emotivo.

Steven and Geoff also talked about their adoption journey, as they have adopted three children from China each. They are very passionate about caring for orphan and poor children. Very inspiring.

Steven y Geoff también hablaron de sus experiencias con la adopción de niños huérfanos, ya que cada uno de ellos ha adoptado tres niños de China. son muy apasionados acerca de la adopción y ayuda a los niños huérfanos, muy inspirador.

Las Vegas is an interesting place to visit. When we told people that we were going, we got many responses, some positive, some very negative, and some curious. One thing that was common among everyone who knew our vacation plans, was the number of stories and suggestions. We took them all and then jumped on a plane. Our first experience of Vegas was the airport and we were amazed to see the slot machines in the terminal. And then... everywhere, even at the supermarket!

Las Vegas es un lugar interesante. Cuando contamos nuestros planes de visitar la ciudad, recibimos muchos comentarios, algunos positivos, algunos muy negativos y otros curiosos. El común denominador fue el número de historias y sugerencias. Las tomamos todas y nos subimos al avión. Nuestra primera experiencia en Las Vegas fué el aeropuerto, y nos sorprendió ver las maquinitas de apuestas en la terminal. Y después ... en todos lados. ¡Hasta en el súper!

Our overall impression of Vegas is it's glamour and excess. We found they either want your money or your soul. Everything is expensive and even wasteful, people pretending to be friendly and then trying to sell you something and then everything is about gambling, drinking, and sex. Nudity even at the Cirque du Soleil shows! We were unable to get tickets to the only show we wanted to see (Love, with music from The Beatles) and everything else had nudity. Smoking and drinking is allowed everywhere, so the hotels were beautiful and glamorous but stinky. Then, on every corner at all hours of the day people handing cards with naked woman and phone numbers. Many of those cards are also on the floor, so Paul couldn't look down because there would be tons of pictures of naked women, plus all the ads and vehicles with ads driving around with sexually suggestive pictures. Definitively sin City, dark and fake. However, it was a good experience because we were able to see the good and the bad.

Nuestra impresión de Las Vegas es glamur y exceso. Descubrimos que la gente quiere o tu dinero o tu alma. Todo es muy caro y hay mucho desperdicio, gente fingiendo ser amigables para venderte algo y además todo gira alrededor de las apuestas, el alcohol y el sexo. Nudismo ¡hasta en los shows de Cirque du Soleil! No pudimos conseguir boletos para el único espectáculo que nos interesaba (Love, con música de Los Beatles) y todos los otros shows tenían nudismo. Fumar y beber está permitido en todos lados, así que los hoteles muy bonitos y glamorosos pero apestosos. Además en cada esquina a toda hora del día había gente volanteando tarjetas con mujeres desnudas y números de teléfono. Muchas de esas tarjetas terminan en el piso así que Paul no podía ver para abajo para evitar ver a todas esas mujeres desnudas, además muchos anuncios y coches con anuncios con fotografías sexualmente sugerentes. Definitivamente la ciudad del pecado, obscura y artificial. Sin embargo fue una buena experiencia pues pudimos ver lo bueno y lo malo.

This year we decided celebrating Catalina's birthday in Las Vegas. We spent few days there and came back two weeks ago. Obviously, the weather was much better than the weather in Calgary, and we came back very tired but the experience was good.

We stayed at The Paris, a French-themed hotel located on the middle of Las Vegas Strip, that includes a half-scale, over 160 m tall replica of the Eiffel Tower, a big sign in the shape of the Montgolfier balloon, a two-thirds size Arc de Triomphe and several other French replicas.

Este año decidimos celebrar el cumpleaños de Catalina en Las Vegas. Pasamos varios días ahí y regresamos hace dos semanas. Obviamente, el clima estuvo mucho mejor que el clima en Calgary y regresamos muy cansados, pero la experiencia fué buena.

Nos hospedamos en el París, un hotel con tema Francés ubicado en el centro de la calle principal, que incluye una réplica de la Torre Eiffel a la mitad de la escala de la verdadera torre, con 160 m de altura, un enorme letrero con forma de globo aerostático Montgolfier y un Arco del Triunfo de 2/3 del tamaño del arco en París, entre otras réplicas Francesas.

We enjoyed dinner at several of the restaurants at The Paris; such as Mon Amie Gaby, where we had a romantic birthday dinner while we enjoyed the show at The Bellagio. We also ate delicious crepes at La Crêperie and other French meals at Le Provencal.

Disfrutamos cenando en varios de los restaurantes en el hotel París; Mon amie Gaby, donde tuvimos una cena romántica de cumpleaños para Catalina mientras disfrutamos el show de las fuentes bailarinas en el Bellagio. También comimos unas crepas deliciosas en La Crêperie y otras comidas francesas en Le Provencal.

We also took the elevator to the top of the "Eiffel Tower" to the observation deck and got a very nice view of the Strip.

Across the street from Paris is the Hotel Bellagio with its large dancing water fountains. These fountains are a choreographed water feature with light and music. The show takes place every 30 or 15 minutes and includes several music genres. The fountains were installed in an almost 4 Ha artificial lake and are formed by several metres of pipes and over 1,200 nozzles, coordinated with more than 4,500 lights.

Enfrente del París está el Hotel Bellagio con sus enormes fuentes bailarinas. Estas fuentes están coreografiadas con luz y sonido. El espectáculo ocurre cada 30 o cada 15 minutos (dependiendo de la hora de la tarde o noche) e incluye varios géneros musicales. Las fuentes están en un lago artificial de casi 4 hectáreas de superficie y están formadas por varios metros de tuberías y más de 1,200 boquillas, coordinados con más de 4,500 luces.

We visited almost all the hotels in the Strip, as each one is unique and has a different theme.

A brand new store we enjoyed was The Sugar Factory, a candy store with amazing treats in the menu; a chocolate bar where you can enjoy chocolate fondue with anything you can imagine, including gold, yes, an expensive item. They also have a restaurant and a candy section with all sorts of candy and ice cream. The "hot" item was the "Couture pops", a $25 lollipop whose feature is the bling lollipop stick that you can reuse and also the plastic cover that allows you to keep your lollipop for later. No, we didn't buy any, the price is ridiculous for a lollipop, even if they are endorsed by many celebrities!

What we did buy (twice, as we kept going back to that store) was ice cream and candies. We got the funnel-like tube that everybody uses in Vegas to drink beer and normally people fill it with candy and once the candy is gone they use it for beer (at a lower price), nobody could believe we wanted to refill it with candy rather than beer, and we got tons of jelly-bellies, chocolates and other candy.

Compramos el tubo que todo mundo usa en Las Vegas para tomar cerveza en las calles y normalmente la gente lo llena de dulces y una vez que se terminan los dulces lo usan para cerveza (que se vende más barata en esos tubos), nadie podía creer que nosotros queríamos rellenarlo de dulces en lugar de cerveza, y nos tocaron muchísimos jelly-bellies, chocolates y otros dulces.

Last week we attended an event at the First Alliance Church: W. Paul Young, the author of The Shack gave an amazing talk. The Shack, a novel originally written for his six children and loved by friends, was originally rejected by Christian publishers because it was to "edgy" and by non Christian publishers because it was too "Jesus-y". Two of his friends created a Publisher company, with only two hundred dollars and started with 11,000 copies (stored in their garages) and within months, sold hundreds of thousands. #1 New York Times bestseller for months and with over 13 million copies sold, the book has been translated to several languages and keeps moving around the globe. Catalina read it and loved it, and Paul is in process of "reading" it (he listens to audio books as he spends so much time in the car). It is one of those books that you either love or hate, but in order to hate it you have to read it first!

The talk was thought provoking, for both Christians, and non Christians as Paul Young has a very particular view of God, having been raised with missionary parents and being abused as a child by members of the church, he does not agree with legalism and religion. He raised important issues and presented a honest view of the church, he even said "If being Christian means hating homosexuals, I'm not a Christian", which tells a lot about how the Church is viewed by non-church goers (we are Christian and we don't hate homosexuals). We found William Paul Young a very interesting person, with a great sense of humour and very knowledgeable of the Bible, Christianity and other religions; a very special and happy human being that has discovered God and God's great love for us.

La semana pasada fuimos a un evento en la Iglesia de la Primera Alianza: W. Paul Young, el autor de La Cabaña dió una plática increíble. La Cabaña es una novela originalmente escrita para sus seis hijos pero muy aclamada por sus amigos fue inicialmente rechazada por editoriales cristianas por ser muy "extrema" y por editoriales no cristianas por tener mucho sobre Jesús. Dos de sus amigos crearon una empresa editorial con solo 200 dólares y comenzaron con 10,000 copias inicialmente almacenadas en el garage. En pocos meses vendieron cientos de miles de copias. Este libro ha sido el mejor vendido según el New York times durante meses y ha vendido más de 13 millones de copias. Ha sido traducido a varios idiomas y sigue vendiéndose como pan caliente alrededor del mundo. Catalina lo leyó y le encantó, Paul está en proceso de "leerlo" (Paul escucha audio libros ya que pasa mucho tiempo en el coche). Es uno de esos libros que o amas o odias, pero ¡Para odiarlo tienes que leerlo primero!

La plática estuvo muy interesante y provocativa para ambos, Cristianos y no Cristianos ya que Paul Young tiene una visión de Dios muy particular, habiendo crecido con padres misioneros y habiendo sido abusado de niño por miembros de la iglesia, él no está de acuerdo con legalismos y con religiones. Él tocó asuntos importantes y presentó una visión honesta de la iglesia, hasta dijo "si ser Cristiano significa odiar a los homosexuales, entonces no soy Cristiano", lo que dice mucho acerca de cómo la iglesia es vista por gente que no va a la iglesia (nosotros somos Cristianos y no odiamos homosexuales). Paul Young se nos hizo una persona muy interesante, con un gran sentido del humor, muy buen conocedor de la biblia, el Cristianismo y otras religiones, un ser humano muy felíz y muy especial, que ha descubierto a Dios y al gran amor de Dios hacia nosotros.

Last week it was papito's birthday. We were not able to celebrate it with him and the rest of our family in Mexico, but we called and talked with him. Two years ago we organized a surprise party for him in Tequis and today we are finally posting some of the pictures of that beautiful day two years ago when family traveled from all over North America to celebrate his 70th birthday. Happy birthday, Papito! We love you tons!

Kings Ring / Rosca de Reyes

Epiphany (which means realization or revelation) is a term used in Christianity to refer to the realization that Christ is the son of God. The churches celebrate January 6th as the day the Magi came from the east looking for the king of the Jews to do him homage. Matthew 2:1-18 tells us that when King Herod heard this he was "troubled" and investigated where the Messiah was to be born. The priests told him that in Bethlehem of Judea, so he called the magi and sent them to Bethlehem and asked them to let him know once they have found the baby, to go himself and do him homage. The magi found Jesus with the help of the star that guided them and stopped over the place where the child was. The magi prostrated themselves and did him homage, opened their treasures and offered him gifts of gold, incense, and myrrh. They were warned in a dream not to return to Herod and departed to their country by another way. When Herod realized that he had been outwitted by the magi, he was furious and gave orders to kill all the boys in Bethlehem and its vicinity who were two years old and under, but Jesus, Mary and Joseph had escaped to Egypt, warned by an angel.

Mexican food is often linked to religious symbols and traditions. This whole story is represented in the Kings Ring that Mexicans eat each year during Epiphany. The night of January 5th, the Three Kings visit the homes of Mexican children and bring toys and gifts (the original Mexican tradition has no Santa, so children get their toys from the Three Kings on that night). On January 6th everybody enjoys the Kings Ring, a circular cake that symbolizes the eternal love of God, with a plastic baby hidden inside, representing baby Jesus hidden from Herod. The cake has dried fruit on the top, to look like a crown from the Three Kings. The cake is eaten everywhere, at schools, offices, homes, everywhere you go, people gather to share the cake and whoever cuts the piece with the plastic baby becomes the "God father" or "God mother" of baby Jesus and will host a party with tamales on February 2nd (yes, the party never ends), when Candlemas day is celebrated.

We love the cake, it is really good, like all sweet Mexican bread. Since we can't find it anywhere in Calgary, this year we decided making our own. We found a recipe on Catalina's favourite Mexican electronic newspaper, El Universal and made two delicious cakes (without the plastic baby, we didn't have any). It took us a long time because the dough has to rise several times, but it was worth it. You even can find a video demonstration of how to make the cake in the newspaper's site (in Spanish). Here is the recipe:

Kings Ring (this recipe is for 2 medium Rings)

1 cup of butter
2 1/2 teaspoons of dry yeast
2 tablespoons of orange blossom tea (can use jasmin tea), prepared with two bags of tea in 3/4 cup water.
2/3 cup milk
4 cups flour
½ cup sugar
1 teaspoon salt
1 to 2 teaspoons of orange peel
4 eggs
Plastic baby or babies (about an inch size)
olive oil

For the top:
8 spoons of soft butter
1/3 cup sugar
1/3 cup flour
Dried fruits (we used glacé cake mix from Safeway, which has orange peel, pineapple, cherries, lemon peel, and citron peel)

PREPARATION TIME 300 MINUTES
Take the butter out of the fridge so that it is soft before starting the process. Don't melt it.

In a small bowl, dissolve the yeast in the two spoons of tea. Add 1/3 cup of the milk and 1/2 cup of the flour. Mix well, the mixture should be sticky and homogeneous. Cover with a damp cloth and place it at a warm place (we put it in front of the fire place) for 30 minutes.

In the mixer bowl, add the 3 1/2 cups of flour left and mix at a low speed with the sugar, salt and orange peel using the hook for 30 seconds to a minute. Add the eggs one by one, the 1/3 cup of milk left and the yeast/milk/flour mixture. Continue mixing until the dough is homogeneous. Increase the speed to medium and add the butter in small pieces, one by one without stopping the mixer. The dough will be sticky but don't add more flour. Mix for 15 to 20 minutes until the dough is soft and doesn't stick to the bowl any more.

Cover the surface of a large bowl with oil and place the dough inside. Cover with a damp cloth and leave it rise at a warm place for 90 minutes (1.5 hours).

After the dough has risen, punch it to remove the gas that formed and turn it around so that the part that was in the bottom is now on the top. Cover again and leave to rise another 30 minutes. (This dough can be now refrigerated for a day and then take it out of the fridge for about an hour and continue the process or can continue without refrigerating).

After the 30 minutes, cut the dough in half with a knife (don't stretch it). Form a ball with each half and place it on the table. Poke a hole in the middle and stretch it to obtain a donut shape. Insert the plastic babies from the bottom.

Place each ring on parchment paper on a baking pan. Cover and let it rise in a warm place for 60 minutes.

In the meantime, prepare the paste for the top by mixing the 8 spoons of soft butter until it rises, add the 1/3 cup of sugar (slowly) and the 1/3 cup of flour.

Decorate the Ring by placing sections of dried fruit alternated with sections with the butter mix placed as small rectangles. Burnish with a mixed egg (or the egg whites only) using a brush so that the fruit will not fall and also to give a nice shining look.

Preheat the oven at 350°F and bake for 30 to 35 minutes until the Rings are golden.

Cut and serve.

Las iglesias celebran el 6 de enero como el día en el que los Reyes Magos vinieron del oriente buscando al rey de los judíos para adorarle. El evangelio de Mateo, capítulo 2 nos dice que cuando el rey Herodes escuchó esto, se turbó e investigó dónde iba a nacer el Mesías. Los sacerdotes le dijeron que en Belén de Judea, así que llamó a los Reyes Magos y los envió a Belén, pidiéndoles que le avisaran para que él también fuera a adorarlo. Los Reyes Magos encontraron a Jesús con la ayuda de una estrella que los guió y se detuvo sobre donde estaba el niño. Los Reyes Magos se postraron a adorarle, abrieron sus tesoros le ofrecieron presentes: oro incienso y mirra. En un sueño los Reyes Magos fueron advertidos que no volviesen a Herodes y regresaron a su tierra por otro camino. Cuando Herodes se vió burlado por los magos se enojó mucho y mandó matar a todos los niños menores de dos años que había en Belén y en todos sus alrededores, pero Jesús, María y José ya habían escapado a Egipto, avisados por un ángel.

La comida mexicana está frecuentemente relacionada con símbolos y tradiciones religiosas. Esta historia está representada en la Rosca de Reyes que los mexicanos comen durante la Epifanía. La noche del 5 de enero los tres Reyes visitan las casas de los niños mexicanos y traen regalos y juguetes (la tradición original mexicana no incluye a Santa Claus, así que los niños reciben juguetes de los Reyes esa noche). El 6 de enero todo mundo disfruta la Rosca de Reyes, un pan circular que simboliza el amor eterno de Dios, con un bebé de plástico escondido dentro, representando al niño Jesús escondido de Herodes. La rosca tiene fruta cristalizada encima, para verse como una corona de los Reyes Magos. Esta rosca se come en todos lados, en las escuelas, oficinas, hogares, a donde vayas, la gente se reúne a partir la rosca y quien corte el pedazo con el muñeco de plástico se convierte en el Padrino o Madrina del niño Jesús, y ofrecerá una fiesta con tamales el 2 de Febrero, día de la Candelaria (la fiesta nunca termina).

A nosotros nos gusta mucho la rosca, es muy rica, como el pan dulce mexicano. Ya que en ningún lugar de Calgary se consigue la rosca de Reyes, este año decidimos prepararla nosotros. encontramos una receta en la versión electrónica del periódico que Catalina siempre lee, el Universal, y preparamos dos roscas deliciosas (sin el muñequito porque no teníamos). Nos tomó mucho tiempo ya que la masa debe aumentar varias veces (con la levadura), pero valió la pena. Puedes encontrar un video demostrando el procedimiento en el sitio del Universal. Aquí está la receta:

Rosca de Reyes (esta receta es para dos roscas medianas)

1 taza de mantequilla
2 ½ cucharaditas de levadura seca
2 cucharadas de té de azahar (o de jazmín) preparado con dos bolsitas de té en 3/4 taza de agua
2/3 taza de leche
4 tazas de harina de trigo
½ taza de azúcar
1 cucharita de sal
1 a 2 cucharaditas de ralladura de naranja o mandarina
4 huevos
Aceite de oliva

Para la decoración:
8 cucharadas de mantequilla
1/3 taza de azúcar
1/3 taza de harina
Fruta cristalizada (higos, naranjas, piña, etc)

TIEMPO DE PREPARACIÓN 300 MINUTOS

Sacar la mantequilla del refrigerador para que esté suave sin que se derrita.
En un tazón pequeño, disolver la levadura completamente en el té de azahar. Añadir 1/3 de taza de la leche y ½ taza de harina. mezclar bien, la mezcla debe ser pegajosa y homogénea. Cubrir con un trapo húmedo y dejar reposar en un lugar cálido durante 30 minutos hasta que se esponje un poco (nosotros la pusimos enfrente de la chimenea).
En el tazón de la batidora, colocar las 3 ½ tazas de harina restantes, batir a velocidad baja con el azúcar, la sal y la ralladura de naranja utilizando el aspa de gancho durante 30 segundos. Agregar los huevos uno a uno, 1/3 de taza de leche restante y la masa con levadura. Batir a velocidad baja hasta que la masa comience a incorporarse. Subir la velocidad a media y agregar la mantequilla en trocitos poco a poco sin dejar de batir. La masa será pegajosa, pero no agregue más harina. Continuar batiendo durante 15 ó 20 minutos hasta que la masa sea suave y se despegue de las orillas del tazón. Si la masa sigue pegajosa después de 15 minutos de batido, puede agregar un poco más de harina (no debe ser más de 1/3 de taza, nosotros no tuvimos que agregar nada, la masa estaba bien suavecita en menos de 10 minutos).

Engrase un tazón grande con aceite y meta la masa. Cúbrala con una toalla húmeda y déjela reposar en un lugar cálido durante 90 minutos hasta que doble su tamaño. Ponche la masa con las manos. Doblar hacia adentro y voltear para que lo de abajo esté ahora arriba. Cubrirla con la toalla húmeda y dejar reposar durante 30 minutos.

Divida la masa a la mitad. Cortar con un cuchillo (no la estire). Amase cada parte en forma de bola sobre la mesa, haga un agujero en medio y estírela para darle forma de dona. Meta los muñequitos de plástico dentro de la masa por la parte de abajo. Coloque cada rosca sobre una charola refractaria cubierta con papel encerado. Cubrir con una toalla húmeda y dejar inflar durante 60 minutos.

Decore con trozos de fruta cristalizada y capricho. Para preparar el capricho. Mezclar con las manos las ocho cucharadas de mantequilla con el tercio de taza de azúcar y el tercio de taza de harina. Haga bolitas, aplástelas para que queden planas y colóquelas sobre secciones de la rosca.

Precaliente el horno a 180 grados (350°F) y hornear cada rosca durante 30 a 35 minutos hasta que esté dorada. Sirva en rebanadas.

2010 was a good year for us. We got to travel, work, enjoy family and celebrate four years of marriage. As we remember the highlights of the year, we thank God for another year of happiness and health, joy, family and love.

2010 fue un año muy bueno para nosotros. Pudimos viajar, trabajar, disfrutar a la familia y celebrar cuatro años de matrimonio. Mientras recordamos el año, damos gracias a Dios por otro año de felicidad y salud, familia y amor.

We started the year at the beach, in Mexico, with our family from Tabasco. It was a gorgeous day.

Empezamos el año en la playa, en Mexico, con nuestra familia Tabasqueña. Fué un día precioso.

We enjoyed our Canadian family as well, David a Georgine came to Calgary several times and we got to enjoy them. We also celebrated with them their wedding anniversary.

Disfrutamos mucho a nuestra familia Canadiense también. David y Georgine visitaron Calgary varias veces y pudimos disfrutar su compañía. También celebramos con ellos su aniversario de boda.

We were fortunate to keep our jobs in 2010, which was a difficult year after the economical crisis of 2008/2009. We were blessed being able to work on what we love. Catalina got to present at an international Conference in the US!

Fuimos afortunados en poder conservar nuestros empleos en 2010, un año difícil después de la crisis económica de 2008/2009. Fuimos bendecidos en poder trabajar en lo que nos gusta. Catalina presentó una ponencia en una conferencia internacional en EU.

We also were able to go back to Mexico in June and enjoy family again.

Our sister Amy got married this year, we celebrated with her, Scott and the rest of the family. We met and enjoyed some time with Scott's family.

Our dear friends Fabricio and Carina also got married and we were part of their beautiful wedding.

This year Catalina became a Canadian Citizen during a very beautiful ceremony. She was very happy to share this day with David and Georgine and celebrate with them, Paul, Karen, and Jenny.

Este año Catalina recibió la ciudadanía Canadiense durante una hermosa ceremonia. Ella estuvo felíz de poder disfrutar este día con David y Georgine y celebrar con ellos, Paul, Karen y Jenny.

We also enjoyed being part of the growth at our churches, joined a new Home Group (without leaving the previous one), and received so many blesssings that we could not count them all. Thank you, Father!

También disfrutamos siendo parte del crecimiento de nuestras iglesias, nos unimos a un nuevo grupo de oración (sin abandonar el anterior) y recibimos tantas bendiciones que no podríamos contarlas todas. ¡Gracias, Padre!

This year we spent Christmas in Calgary, like every other year. Our sister Jenny hosted the Christmas dinner and we were fortunate to spend the afternoon and evening with Paul's parents and all his siblings.

On Christmas Eve, David and Georgine came from Three Hills and stayed with us, it was a very nice evening for Catalina (Paul was working), she got to know more about the Nadeaus and together they used Google to "visit" places where David and Georgine lived in Toronto and Manitoba, and also visited Mexico.

We started Christmas day with brunch at our place. Paul prepared crepes and Blake and Karen came and spent the morning with us and with David and Georgine. Later on we went to Jenny and Adam's home and spent the rest of the day there, chatting, eating and enjoying the family.

What we enjoyed the most was the family time and of course, the food!

Este año pasamos la Navidad en Calgary, como cada dos años. Nuestra hermana Jenny organizó la cena de Navidad y tuvimos la oportunidad de pasar la tarde y la noche con los papás y hermanos de Paul.

Durante la Nochebuena, David y Georgine vinieron de Three Hills y se quedaron con nosotros, fué una tarde muy bonita para Catalina (Paul estaba trabajando), ella conoció más de los Nadeaus y juntos usaron Google para "visitar" lugares donde David y Georgine vivieron en Toronto y en Manitoba, y también visitaron México.

As always, we get so busy with our lives that we neglect our blog. Now we will attempt to summarize the events from the last four months - with pictures.

This is a rare occasion. Paul is normally not on stage and especially not singing with his boss. Here, with his Mexican soccer team jersey at a Latino concert at the church last summer.

Next day after the concert, Starfield came to First Alliance Church and was in charge of worship. It was an amazing service and the music was beautiful.

Mid September - Catalina attended a course in San Diego and enjoyed beautiful weather while in Calgary we received some snow (that melted right away). She really loved san Diego.

In October we were invited to celebrate with our youngest sister Amy that she is now married. She eloped in July and married Scott. We wish them the best in their marriage!

En Octubre fuimos invitados a celebrar que nuestra hermana menor Amy está ahora casada. Ella se casó en secreto en Julio con Scott. ¡Les deseamos lo mejor en su matrimonio!

On November 6th, we celebrated with our lovely nephew Anderson his second birthday, he is growing so fast! All he wanted to do was blowing the candles over and over. Very cute!

In early November we participated and enjoyed enormously Caryna and Fabricio´s wedding. Our entire Home Group (except for Lina) attended the ceremony and the party at the Lynx Ridge Golf Club. What a beautiful day!

In Mid november Catalina received her engineering ring. She has been registered as a Professional Engineer and was very happy to participate at the Iron Ring Ceremony (which should be mentioned separately).

Last Thursday Catalina became a Canadian Citizen. The long journey is finally over! After passing her test in the morning she received the Citizenship in the afternoon. Paul, David and Georgine were there for the very emotive ceremony. Jenny and Karen joined us to celebrate at dinner. Jenny brought with her a different Citizenship test that everyone enjoyed completing. We all passed!

El Jueves pasado Catalina se convirtió en una nueva Ciudadana Canadiense. El largo proceso por fin terminó. Después de aprobar el examen en la mañana, ella recibió la ciudadanía en la tarde. Paul y sus papás estuvieron ahí durante la muy emotiva ceremonia. Jenny y Karen nos alcanzaron para celebrar en la cena. The opal mine / La mina de ópalos

The opal mine “La Carbonera” is located in a town know as La Trinidad (the Trinity), 12 km south of Tequis. This mine is one of the oldest and largest opal mines in the country.

According to historians, the opals from Querétaro were utilized by the Aztecs in their ornamental and ceremonial objects between years 1200 and 1520. Opals were known by the Aztecs as “humming bird stones” because of the iridescent colours, comparable to the feathers of the bird.

The $4.00 CND tour started with a visit to the house of the family in charge of the mine. They have “conditioned” pick-up trucks (4x4s with benches where you sit and some cover from the sun). The terrain is not easy for any other type of cars; the ride takes about ten minutes (the miners walk this road every day).

La mina de ópalos “La Carbonera” se localiza en un pueblo llamado “La Trinidad”, 12 kilómetros al sur de Tequis. Esta es una de las más antiguas y más grandes minas de ópalos en el país.

De acuerdo con los historiadores, los ópalos de Querétaro fueron utilizados por los aztecas en objetos ornamentales y ceremoniales durante los años comprendidos entre 1200 y 1520. Los aztecas llamaban a los ópalos “piedra de colibrí”, debido al parecido entre los colores iridiscentes de la piedra y el plumaje de los colibríes.

El tour ($50 pesos) inició con una visita a la casa de la familia a cargo de la mina. Ellos tienen camionetas pick-up “acondicionadas” (con bancas donde te sientas y con un techito para cubrirte del sol). El terreno no es fácil para otro tipo de vehículos ; el viaje toma unos diez minutos (los mineros caminan el trayecto todos los días).

Once in the mine, the guide explains that opals are semi precious stones which price depends on properties such as size, shape, iridescence, etc. opals are formed with silica and water, the silica coming from quartz and the water from surface water infiltration and stagnation in the porous rocks. The guide provides everyone with pick axes (just like the seven dwarfs’) and explains that the miners still use those tools today to extract the opals. We are told that whatever we found is ours, by law.

Una vez en la mina, el guía nos explica que los ópalos son piedras semi-preciosas y que su precio depende de propietades tales como tamaño, forma, etc. Los ópalos se forman con sílice y agua, sílice del cuarzo y agua proveniente de infiltraciones de agua superficial, que se aloja en los huecos de la rocas. El guía nos da a todos un martillo de minero (como el de los siete enanitos) y nos explica que los mineros todavía usan esa herramienta para extraer los ópalos. We spent several hours walking, listening to mining stories and looking for the perfect opal. We all found some small rocks with embedded opals that we kept as souvenirs. It was a very special day.

Tequisquiapan, Querétaro

We arrived to Tequisquiapan with Doug and Naye and we were received with lots of love and a wonderful meal: pozole, a pre-hispanic meal that contains chicken broth, hominy, chicken, lettuce, avocado, radish, onion, oregano, and can be as spicy as you want.

Tequisquiapan is the small town that we described previously, where Catalina’s family live. We spent the rest of our vacation there.

Llegamos a Tequisquiapan con Doug y Naye y fuimos recibidos con mucho amor y con una comida maravillosa: pozole.

Doug and Naye not only received us at their home and took us places in Leon, but they also came to Tequisquiapan (our final destination) with us. Before getting to Tequisquiapan, they took us to a very special place: Hacienda Corralejo.

Doug y Naye no solo nos recibieron en su casa y nos llevaron a varios lugares en León, sino que también fueron a Tequisquiapan (nuestro destino final) con nosotros. Antes de ir a Tequis, nos llevaron a un lugar muy especial: la Hacienda Corralejo.

The beautiful Hacienda Corralejo was built in 1775 in Penjamo, Guanajuato, and is a historic place because Miguel Hidalgo, "the father of the country" was born there. Miguel Hidalgo is a Mexican hero. Being a priest, he started the Mexican independence of Spain in 1810 (this year, Mexico is celebrating 200 years of independence). In this hacienda tequila is produced these days and we took a tour through the tequila production process.

La hermosa hacienda Corralejo fué construida en 1775 en Pénjamo, Guanajuato, y es un lugar histórico porque Miguel Hidalgo, el padre de la patria nació ahí. En esta hacienda se produce tequila y tomamos un tour a través del proceso de producción.

At the end of the tour, we were able to test all the different tequilas that are made there, and got some for home (which we recently enjoyed).

Every time we go to Mexico, Catalina tries to show Paul a new part of the country. This time, we got our tickets to Leon, (which translates into Lion), Guanajuato where our aunt Lupita, cousins Douglas, Nayeli, and Percy live.

Leon is the most populated city in the State of Guanajuato and is famous for its strong leather industry. Shoes, belts, jackets, purses (and everything made in leather) are manufactured here and sold locally, nationally and internationally.

We were received as royalty by our cousins Doug and Naye and stayed at their very nice new home. Together with our aunt Lupita, they took us to very nice places, including two exceptional restaurants, one with international cuisine and the second very Mexican, where we enjoyed authentic Mexican food, accompanied by two salsas, made right at our table! Now, that's fresh!

Cada vez que vamos a México, Catalina ha tratado de mostrar a Paul una nueva parte del país. Esta vez sacamos nuestros boletos a León, Guanajuato, donde viven nuestra tía Lupita y primos Douglas, Nayeli y Percy.

León es la ciudad más poblada del Estado de Guanajuato, y es famosa por su industria de la piel. Aquí se manufacturan zapatos, cinturones, chamarras, bolsas (y todo lo que es hecho en piel), y se venden localmente, nacionalmente e internacionalmente.

Nuestros primos Nayeli y Douglas nos recibieron como si fuéramos de la nobleza y nos quedamos en su hermosísima casa nueva. Nuestra tía Lupita y ellos nos llevaron a lugares muy lindos, incluyendo dos restaurantes excepcionales, uno con comida internacional y el segundo muy mexicano, donde disfrutamos comida auténtica mexicana, acompañada por dos salsas deliciosas, hechas en nuestra mesa, ¡Verdaderamente frescas!

We had to do some leather shopping, so our aunt Lupita took us to the shoe malls. Yes, Leon has complete malls of only shoes. We found all the best brands in the country (as well as unknown brands), there is even a huge shoe outlet mall, where we discover great deals and great selection. We also visited markets with many belts, purses, jackets, boots, etc (all leather). We got our good supply of shoes and belts.

Teníamos que ir de compras, así que nuestra tía Lupita nos llevó a las plazas de zapatos. Sí, León tiene plazas completas de solo zapatos. Encontramos las mejores marcas (y otras no tan conocidas). Hasta visitamos un enorme centro comercial de liquidación de zapatos, donde descubrimos muy buenas ofertas y una gran selección. También visitamos mercados de cinturones, bolsas, chamarras, botas, etc. Compramos una buena dotación de zapatos y cinturones.

We also visited the zoo, the historical downtown, used the local transit system, and of course, enjoyed great Mexican food. The highlight was spending time with that part of the family; all of them speak fluent English, so Paul was able to fully enjoy our time there. Catalina was in heaven.

También visitamos el zoológico, el centro histórico, tomamos el medio de transporte local (la famosa oruga), y desde luego, disfrutamos la deliciosa comida mexicana. La parte más padre fué poder pasar tiempo con esta parte de la familia; todos ellos hablan inglés, así que Paul pudo disfrutar completamente nuestros días en León. Catalina estaba en el paraíso.

Yes, we just came back from our summer vacation to Mexico. With Catalina being from Mexico, we always have nice places to visit, without even thinking about the beaches; Mexico is much more than beaches. This time, we visited Mexico City (briefly) and the states of Guanajuato and Queretaro and have many pictures to share. Stay tuned!

... except this time. Almost a year ago during a Canada Day celebration we entered for a draw of airplane tickets that a travel agency was sponsoring. We did not win the airplane tickets but we won a one night accommodation at a deluxe room with mountain view at the Rimrock hotel (in Banff), taxes included. Last weekend we used our gift and spend a couple wonderful days at the mountains, visited Lake Louise and Banff , enjoyed the hotel facilities, played settlers, and had our wine, cheese and bread plus some dessert at the hotel. It was a very nice little retreat for us.

...excepto esta vez. Hace casi un año durante una celebración del día de Canadá, participamos en una rifa de unos boletos de avión que una agencia de viajes patrocinó. No ganamos los boletos de avión, pero ganamos una noche de hotel en un cuarto de lujo con vista a las montañas en el Rimrock (en las montañas rocallosas que están en el parque Banff), impuestos incluídos. El fin de semana pasado usamos nuestro regalo y pasamos un par de días padrísimos en las montañas, visitamos el lago Louise y Banff, disfrutamos las instalaciones del hotel, cenamos nuestro famoso vino, queso y pan mas postres en el hotel. Fué un hermoso retiro para nosotros.

The rest of the world is enjoying Spring, warm weather and green grass, flowers and birds. Here in Calgary we still haven't experienced Spring. This picture was taken (in front of our home) over a week ago; we have been enjoying some snow (melted by now) and not so warm days. The good thing is that we will really appreciate the Summer when it finally comes.

El resto del mundo ya está disfrutando a la primavera, clima tibio y pasto verde, flores y pájaros. Aquí en Calgary todavía no hemos experimentado la primavera. Esta foto fué tomada (frente a nuestra casa) hace poco más de una semana; hemos estado "disfrutando" algo de nieve (por ahora derretida) y días no muy cálidos. Lo bueno es que nosotros vamos a apreciar más y disfrutar más del verano cuando por fin venga.

In the highway to San Miguel there is an Spanish restaurant that we like visiting, "El Asador Catalán". We like their food as the owner is from Barcelona and the menu is full of Catalan dishes that we tried during our honeymoon in Barcelona. This time we found out that the restaurant is expanding but the expansion is not conventional. The owner has bought old train cars, adapted them and uses them as part of the restaurant. We decided trying eating there and had a very nice experience.

En la carretera a San Miguel hay un restaurante español que nos gusta visitar, "El Asador Catalán". Nos gusta su comida ya que el dueño es de Barcelona y su menú está lleno de platillos catalanes que probamos durante nuestra luna de miel en Barcelona. Esta vez nos encontramos con que el restaurante está creciendo, pero la expansión no es convencional. El dueño compró viejos carros de tren, los acondicionó y los utiliza como parte del restaurante. Decidimos comer ahí y fué una experiencia padrísima.

After coming back to Tequisquiapan from our trip to the South, we spent a week visiting local places such as San Miguel de Allende, (in the State of Guanajuato) a colonial city which name means "Saint Michael of Allende" now dedicated to Saint Michael the Archangel and the Mexican independence hero Ignacio Allende, native of Saint Michael.

Cuando regresamos a Tequisquiapan de nuestro viaje al sur, pasamos una semana visitando lugares cercanos, como San Miguel De Allende (en el Estado de Guanajuato) una ciudad colonial ahora dedicada a San Miguel Arcángel y al héroe de la independencia Ignacio Allende, nativo de San Miguel.

San Miguel de Allende is one of Mexico's top 10 tourist destination, receiving over 100,000 tourist per year and having the largest population of Americans in the country (more than 10% of the population are American or Canadian, with some Europeans as well). In 1926 it was declared a national monument, so no neon signs or modern buildings are allowed. This place is famous for its mild climate, colonial architecture and convenient facilities for foreigners such a public library with the second largest collection of English language books in Mexico; a large volunteer community; a very active theatre community, etc.

San Miguel de Allende es uno de los 10 lugares turísticos más visitados en México, recibiendo más de 100,000 turistas por año y con la población de Estadounidenses más grande del país (más del 10% de la población son Estadounidenses o Canadienses y algunos Europeos). En 1926 fué declarado monumento nacional así que no hay anuncios grandes ni edificios modernos. este lugar es famoso por su clima templado, arquitectura colonial y sitios convenientes para los visitantes tales como una biblioteca pública con la segunda colección más grande de libros en inglés en México, una comunidad de voluntarios muy grande y activa; una comunidad teatral importante y activa, etc.

We visit this city every time we go to Mexico. We love the sweet bread from a very good bakery located few steps from the church. We also visit the market and buy hand crafts. There is a beautiful store dedicated to angels called "The house of the archangels" where we always buy a figurine of Saint Michaels to bring to our friends in Calgary as our parish is dedicated to Saint Michael.

Cada vez que viajamos a México visitamos esta ciudad. Nos encanta el pan dulce de una panadería buenísima que se encuentra a unos pasos de la iglesia. También visitamos el mercado y compramos artesanías. Hay una tienda muy bonita dedicada a los ángeles que se llama "La casa de los arcángeles" donde siempre compramos figuras de San Miguel para nuestros amigos en Calgary ya que nuestra parroquia en Calgary está dedicada a San Miguel.

After visiting the beautiful State of Tabasco for several days, we had to say bye to our dear family and leave the exotic, green and warm place. We drove over 1,000 km back to Tequisquiapan in two segments, stopping in Xalapa for a night.

Después de visitar el hermoso Estado de Tabasco por varios días, tuvimos que decir adiós a nuestra querida familia y dejar ese lugar calientito, verde y exótico. Manejamos los más de 1,000 kilómetros de regreso a Tequisquiapan en dos segmentos, parando en Xalapa por una noche.

The drive was nice and we had the opportunity to appreciate the different vegetation as we drove away from the coast. We were also able to enjoy the food at La Parroquia in Xalapa again.

El camino estuvo agradable, y tuvimos la oportunidad de apreciar los cambios en la vegetación mientras nos alejábamos de la costa. También pudimos disfrutar de nuevo la comida en la Parroquia de Xalapa.

Known as the "Quinta Grijalva", the house of the Governor of Tabasco, used as a refuge by more than a thousand people during the flood of 2007; is a beautiful house surrounded by beautiful gardens, fruit trees and palm trees, opens to the public during the Christmas season and a fair known as the "Chocofeller" takes place in the gardens and extends to the park outside of the house. Here we have to indicate that "Chocofeller" is a name that combines the words "chocolate" with "Rockefeller" . Chocolate because Tabasco is the main producer and the birthplace of cacao (cocoa), and Rockefeller because of the Christmas lights and decorations that try to imitate those of the Rockefeller Centre in New York, Mexican style.

Conocida como la "Quinta Grijalva", la casa del Gobernador de Tabaso, usada como albergue por más de mil tabasqueños durante la inundación del 2007; es una bella residencia rodeada por hermosos jardines, palmeras y árboles frutales y abre al público durante la temporada navideña y una feria conocida como la "Chocofeller" se realiza en los jardines y se extiende al parque localizado fuera de la casa. Aquí hacemos la aclaración de que "Chocofeller" es un nombre que combina las palabras "chocolate" y "Rockefeller". Chocolate porque Tabasco es el productor principal y el lugar de origen del cacao, y Rockefeller porque las luces navideñas traen a la memoria las del centro Rockefeller en Nueva York, estilo mexicano.

We visited this historical place, attracted by the Christmas decorations that included a huge moving nativity and many moving characters from Walt Disney and popular cartoons, including Santa Claus. The first stop was at the line-up for security checks (carried on by armed soldiers), papito was carrying a knife and the soldiers found it, so they took it and to our surprise, we recovered it when we left the complex.

Visitamos este lugar histórico, atraídos por las decoraciones navideñas que incluyeron un enorme nacimiento que se movía y muchos personajes de Walt Disney y otras caricaturas populares, incluyendo Santa Claus. La primera parada fué en la fila para pasar por la revisión de seguridad (llevadas a cabo por soldados armados); papito llevaba una navaja , los soldados la encontraron y la confiscaron, pero pudimos recuperarla a la salida.

Inside of the complex, an outdoors movie was being projected and there was a line-up to enter the house; when we entered we were not interested on the house and furniture, but on the nativity scene that we were told was amazing. Amazing indeed, with more than 4,000 pieces representing biblical scenes, such as the people of Israel worshiping a golden calf, the building of the pyramids in Egypt by the Israeli slaves, the last supper, the crucifixion and resurrection of Jesus, etc. Not only the nativity but the whole life of Jesus was represented with small pieces collected by the family of the current Governor, Andrés Granier. That was the highlight of our visit there. After leaving the house, pop was offered to all visitors and each child received a chocolate bar made in Tabasco (we were given 3 chocolate bars when we told them we were visitors from Canada).

Dentro de la propiedad, una película estaba siendo proyectada al aire libre y había una fila para entrar la casa; cuando entramos no nos interesaba la casa o los muebles sino el nacimiento que nos habían contado era increíble. Y sí lo fué, con más de 4,000 piezas representando escenas bíblicas, tales como el pueblo de Israel adorando un becerro de oro, la construcción de las pirámides de Egipto por los esclavos israelíes, la última cena, la crucifixión y resurrección de Jesucristo, etc. No solo el nacimiento sino toda la vida de Jesús estuvo representada con pequeñas figuritas coleccionadas por la familia del actual Gobernador, Andrés Granier. Esa fué la mejor parte de nuestra visita a esta famosa quinta. Después de salir de la casa, a todos los visitantes se les ofrecía un vaso de refresco, y cada niño o niña recibía una barra de chocolate hecha en Tabasco (a nosotros nos dieron 3 barras de chocolate cuando les dijimos que veníamos de Canadá).

We were invited to the beach on New Year's day. Our cousin Tita and her husband Regino, with their children Rogelio, Alejandro, and Beto took us to their place by the beach (45 minutes drive from Villahermosa). We brought along the leftovers from the New Year's eve dinner and spent a relaxing beautiful day with our papitos, Dea, Carlos, Bella, Lumi, and Tita's family, drinking coconut juice and eating great food.

En el primer día del año, fuimos invitados a ir a la playa. Nuestra prima Tita y su esposo Regino, con sus hijos Rogelio, Alejandro y Beto, nos llevaron a su propiedad en la playa (a 45 minutos de Villahermosa). Llevamos lo que quedó de la cena para el recalentado y pasamos un día precioso, relajándonos en la playa con Lumi, nuestros papitos, Dea, Carlos, Bella, Lumi y la familia de Tita y Regino, tomando agua de coco y comiendo comida deliciosa.

Catalina's family and most families in Mexico celebrate New Year's Eve similarly to Chirstmas Eve, with a big family reunion, turkey, etc. The fireworks are a big part of the celebration as well. We ate delicious food and share with family members that Catalina had not seen for several years and Paul didn't even know many of them. It was a memorable reunion for all the family and we are thankful with everybody and with God for the gift of a united, loving family.

La familia de Catalina, como la mayoría de las familias en México, celebran el Año Nuevo de manera similar a la Noche Buena, con una reunión familiar, pavo, etc. Los cuetes y fuegos artificiales son una parte importante de la celebración. Comimos deliciosos platillos y celebramos con familiares que Catalina no había visto durante varios años y Paul no conocía a muchos de ellos. Fué una reunión memorable para toda la familia y estamos muy agradecidos con todos y con Dios por el don de una familia unida y amorosa.

During our visit to Villahermosa we went for a walk on the afternoon of New Year's eve with our cousin Tita and her children. We visited a lake in the middle of the City at a residential area. As we were going to take the stairs to a lookout, we noticed an alligator standing just by the stairs. Needless to say we didn't go to the lookout. Tita told us that the dogs and other pets from the people that leave around that lake often go missing. Oops!

Durante nuestra visita a Villahermosa, fuimos a caminar la tarde de año nuevo con nuestra prima Tita y sus hijos. Visitamos un lago en un área residencial de la ciudad. Cuando íbamos a subir unas escaleras para ir a un mirador, vimos un lagarto parado cerca de las escaleras. No hace falta decir que no fuimos al mirador. Tita nos dijo que la gente que vive alrededor de este lago pierden sus perros y otras mascotas frecuentemente. Oops!

The pejelagarto (translated to something like "fishgator" but known in English as gar fish) is a very common fish in Tabasco, the only place where this fish can be found. This fish has a long face, with long and sharp teeth, similar to those of the alligators, but the rest of the body looks like a fish.

El pejelagarto es un pez muy común en Tabasco, el único lugar donde este pez se puede encontrar. Este pez tiene una cara larga, con dientes largos y afilados, similares a los de un lagarto, pero el resto del cuerpo se parece al cuerpo de cualquier otro pez.

The pejelagarto is a symbol of Tabasco, where people eat them in different ways. We were able to see them alive at the Yumká park, where Carlos also ate one. When we visited the market we saw lots of them, being sold raw or cooked.

After visiting La Venta park, we visited the Yumká park, located 17 km from Villaherrmosa. The Kumká is basically a zoo where the animals run semi-free in a 101 hectares divided into several ecosystems, including an African savannah, local jungle, serpent region, bird area, manatee lagoon, etc.

Después de visitar el parque de la Venta, visitamos el parque Yumká, que se localiza a 17 km de Villahermosa. Este parque es básicamente un zoológico donde los animales viven en estado semi-libre en 101 hectáreas divididas en varios ecosistemas, incluyendo la sabana africana, la selva, serpentario, apiario, laguna de manatíes, etc.

Once entering the park, the first thing to do is to walk through the jungle where a guide describes the animals and exotic plants, the importance and the equilibrium of the jungle. Jaguars and tigers can be observed (thankfully in their cages).

A suspended bridge allows visitors to cross above a lagoon populated with fish and alligators, several large iguanas can also be observed.

Then, an open local railway-type vehicle takes visitors through the savannah region, where elephants, zebras, giraffes, rhinoceros, deer and other animals run free enjoying the beautiful place. A giraffe walked less than two meters from our vehicle.

The vehicle drops the visitors at the interpretive centre, where the hippopotamus can be observed, close to the aviary and herpetarium (snakes sections). A restaurant that serves local food is in that area too; we ate surrounded by ducks, swans, peacocks, and iguanas. Catalina could not resist taking the following picture and Carlos followed her.

El vehículo deja a los visitantes en el centro donde puede observarse a los hipopótamos, cerca del aviario y serpentario. Un restaurante que sirve comida local también se encuentra en esa área; comimos rodeados de patos, cisnes, pavos reales, e iguanas. We spent a great day in Yumká, a place like no other, with wonderful weather, amazing animals and good food, all at a very good price (the entrance fee to the park is less than 5 dollars per adult and about 2 dollars per child or older adult). We enjoyed being there with our family and our new friend Jorge.

The outdoor park-museum of La Venta is an eco-archaeological museum located in the City of Villahermosa, Capital of Tabasco. This beautiful park opened in 1958 and was designed by the local poet Carlos Pellicer when oil exploration threatened the very important Olmec site of La Venta (located around 130 km from Villahermosa). The site's most important pieces were relocated to this museum, including the famous colossal stone heads. Most of these pieces belong to the Olmec culture that flourished in the region between 1300 and 200 BC.

El parque museo de la Venta es un parque eco-arqueológico localizado en la Ciudad de Villahermosa, capital del Estado de Tabasco. Este hermoso parque abrió en 1958, y fué diseñado por el poeta Carlos Pellicer cuando las exploraciones petroleras amenazaron al sitio Olmeca de La Venta (que se localiza a 130 km de Villahermosa, más o menos). Las piezas más importantes fueron reubicadas a este museo, incluyendo las famosísimas cabezas enormes de piedra. La mayoría de estas piezas pertenecen a la cultura Olmeca que floreció en la región entre los años 1300 y 200 A.C.

The stone heads measure more than two meters tall and weigh more than 15 tons each, nobody has been able to figure out how the Olmecs were able to move the enormous rocks used as raw material from an area almost 100 kilometres away and then carve the heads.

Las cabezas de piedra miden más de dos metros de altura y pesan más de 15 toneladas cada una. Nadie ha podido explicar cómo los Olmecas pudieron mover las enormes rocas usadas para hacer las cabezas desde un área localizada más de 100 kilómetros.

Once entering the park, the first things to see are the animals located in a little zoo. These animals are native to the region (jaguars, ocelots, monkeys, alligators, toucans, etc).

Comalcalco, Tabasco

Abut sixty kilometres northwest of Villahermosa, the Mayan Archaeological zone of Comalcalco can be found in the middle of the jungle and close to the city of Comalcalco. This is considered to be one of the westernmost Mayan settlements, constructed around 600 BC.

A unos sesenta kilómetros al noroeste de Villahermosa, se encuentra la zona arqueológica Maya de Comalcalco, en la mitad de la selva y cerca de la ciudad de Comalcalco. Es considerada una de los asentamientos Mayas más al oeste del país, construida alrededor del año 600 DC.

This archaeological site is notable because the buildings were made from clay bricks, held together with mortar made from oyster shells (gravel was not available at the time in that region).

We visited Comalcalco on our second day in Tabasco, with papitos, Lumi, Ivana, Dea, Carlos, Bella, our new friend Jorge, and our nephew Alejandro, who was our first class guide. It was very nice visiting the jungle too.

We were fortunate to visit Villahermosa, the capital of the State of Tabasco, where we have a lot of family (mamita's side of the family). We got to see many of them and spent great time visiting, eating, and just talking. They all were very welcoming and loving (from the youngest, little Ivana to the oldest, uncle Roberto) and we are thankful for all their love and all they did for us. This year we went to Mexico with plans to visit Tabasco, the state where mamita was born. So we brought Catalina's parents, Dea, Bella and Carlos and drove. Since the journey was long (over 1,000 km each way) we took it easy and stopped in Xalapa (both ways). We spent one day and two nights in Xalapa and visited our favourite places; the interactive museum for the kids, and La Parroquia cafe and Picrecha restaurant for all. It was a short but very nice visit. We just love Xalapa, with its green parks, humidity and beauty (besides the food).

Este año fuimos a México con planes de visitar Tabasco, el estado donde mamita nació. Así que nos llevamos a los papás de Catalina, Dea, Bella y Carlos y manejamos. Debido a que la jornada es larga (más de 1,000 km de ida y otro tanto de regreso), paramos en Xalapa. Pasamos dos noches y un día en Xalapa y visitamos nuestros lugares favoritos; el Museo Interactivo para los niños y el café de la Parroquia y el restaurante Picrecha para todos. Fué una visita corta pero muy linda, simplemente nos encanta Xalapa, con su verdor, humedad y belleza (además de la comida).

This year was our turn to spend Christmas with Catalina's family, including this year Catalina's parents, sister, nephew and nice and some of the Bonillas; our aunt Guadalupe (papito's sister) and her boys Carlos (and Cecy), Douglas (and Nayeli) and Percy. In Mexico, the main Christmas celebration takes place in Christmas Eve.

After eating mamita's delicious tamales for lunch and celebrating Douglas' birthday (December 24!), we went for a walk, played games and got ready for the evening.

Before dinner (at Dea's house), the children put together a gingerbread house (not a Mexican tradition but something we always bring with us because they enjoy it a lot).

Este año era nuestro turno de pasar Navidad con la familia de Catalina, incluyendo este año a los papás de Catalina, su hermana, sobrinos y algunos de los Bonilla; nuestra tía Guadalupe (hermana de papito) y sus hijos Carlos (y Cecy), Douglas (y Nayeli) y Percy. En México la navidad se celebra en la Nochebuena.

Después de comer los deliciosos tamales de mamita al mediodía y celebrar el cumpleaños de Douglas (el 24 de Diciembre), salimos a caminar, jugamos juegos de mesa y nos preparamos para la noche.

Antes de cenar (en la casa de Dea), los niños armaron una casita de jengibre (que no es una tradición mexicana pero cada vez la llevamos de Canadá porque los niños la disfrutan mucho).

We also lit a fire in the backyard and enjoyed the Mexican winter weather.

También encendimos una fogata y disfrutamos el clima invernal de México.

For dinner we enjoyed the traditional turkey, spaghetti, apple salad, and two soups, both spicy and delicious. We also had lots of fruit punch, that in Mexico is prepared by boiling several fruits (apple, guava, sugarcane, etc), cinnamon, and molasses.

En la cena disfrutamos el tradicional pavo, espagueti, ensalada de manzana y dos sopas, ambas picosas y deliciosas. También tomamos mucho ponche, que en México se prepara hirviendo varias frutas (manzana, guayaba, caña, etc), canela, y piloncillo.

After dinner we played our traditional gift game and had a piñata, that Carlitos broke very easily (next time we are covering his eyes).

Después de cenar jugamos nuestro tradicional juego de los regalos y también tuvimos una piñata que Carlitos rompió muy fácilmente (la próxima vez le vendamos los ojos).

Everybody collected lots of candy / Todos recogimos muchos dulces.

Next day (Christmas day) we continued eating, we had a brunch in the backyard of Dea's house and enjoyed the leftovers from dinner.

We spent three fabulous weeks in Mexico, visiting the beautiful states of Querétaro, Veracruz, and Tabasco, being the trip to Tabasco the highlight of the whole trip. Not only because Tabasco is a beautiful, exotic place, but mainly because we got to see family and they received us as royalty, treated us to amazing food and places, we really felt the love of our family. Thank you so much, Hidalgo, Oropeza, Eboli, Roca, and Bonilla families (and their combinations thereafter), you are amazing beautiful people! We hope to see you more often, under circumpstances like these, happiness and joy!

Pasamos tres semanas fabulosas en México, visitamos los hermosos estados de Querétaro, Veracruz y Tabasco, siendo el viaje a Tabasco la mejor parte de todo el viaje. No solo porque Tabasco es un lugar hermoso y exótico, pero sobre todo porque pudimos visitar familia y ellos nos recibieron como si fuéramos de la realeza, nos dieron deliciosa comida y nos llevaron a lugares preciosos. Last Thursday night Paul ran into a door frame and broke his baby toe. We didn't know it was broken and on Friday he had a long day, with Starfield coming to the church, Paul had a lot of work. By Saturday morning the pain was worse so we went to the doctor and found out he broke his toe and there is nothing that can be done to fix it, just take it easy. So he took sick time on Saturday and Sunday and we stayed at home. Hopefully this week he will be better, he is back to work tomorrow morning. Poor Polito!

El jueves pasado Paul se rompió el dedo chiquito del pié al correr y golpearse contra el marco de una puerta. No sabíamos que el dedito estaba roto y el viernes Paul tuvo un día muy pesado, con el concierto de Starfield. El sábado en la mañana el dolor estaba peor así que fuimos al doctor y averiguamos que en efecto el dedo está fracturado y no hay nada que se pueda hacer para repararlo, solamente cuidarse hasta que solito sane, así que el sábado y el domingo Paul no fué a trabajar, se reportó enfermo y nos quedamos en casa. Esperamos que esta semana mejore, él va a ir a trabajar mañana en la mañana. ¡Pobre Polito!

Starfield is a great Christian band, and they are Canadian! We love their music and Catalina is a big fan, so as soon as we knew they were coming to Calgary Catalina got her ticket. They came last Friday to First Alliance Church and Paul got to help out and facilitate technical support. We both enjoyed the concert and got to chat with the band backstage. They are very friendly and kind, we really enjoyed them and their music. The concert was sold out and we all wanted more at the end, can't wait to have them back!

Starfield es una banda Cristiana excelente, y son Canadienses. Nos encanta su música y Catalina es una gran admiradora, así que cuando supimos que venían a Calgary Catalina sacó su boleto. Vinieron el viernes pasado a la iglesia de la Primera Alianza (donde Paul trabaja) y Paul ayudó en cuestiones técnicas. Disfrutamos mucho el concierto y pudimos platicar con la banda atrás del escenario. Ellos son unos chicos muy amigables y amables, realmente los disfrutamos mucho a ellos y a su música. Los boletos para el concierto se agotaron y todos queríamos seguir escuchándolos al final, ¡ya queremos que regresen!

Janet is a great friend and now ex-co-worker of Paul. She served at the First Alliance church technical department for the last several years. She and her husband recently moved to Fort McMurray due to her husband's work, so she quit her job.

Jenny and Tito are missionaries in Argentina. She is from Canada (from the First Alliance Church) and he is from Ecuador. They recently came to Calgary to get married. We were asked to coach them through their marriage preparation course, mainly because he doesn't speak English and because we are a culturally mixed couple as well.

Tito y Jenny son misioneros en Argentina. Ella es Canadiense (de la iglesia de la Primera Alianza) y él es de Ecuador. Recientemente vinieron a Calgary a casarse. Nos pidieron que los ayudáramos en su curso de preparación matrimonial, principalmente porque él no habla inglés y porque nosotros también somos una pareja culturalmente mixta.

We enjoyed the journey with them and we were truly blessed spending time with them and being part of their wedding, where Catalina translated the ceremony for him.

Disfrutamos mucho el tiempo que pasamos con ellos y recibimos grandes bendiciones al poder ayudarlos en su preparación y en su boda, donde Catalina tradujo la ceremonia para él.

After their wedding in Calgary, they went to Ecuador for a second wedding (pretty much like ours) and after that they went back to Argentina to continue their work for God. Intolerant / Intolerante

Catalina has been diagnosed with lactose intolerance which broke her heart, she loves cheese (especially gourmet cheeses), cream, ice cream, and yogourt. The doctor recommended that she completely eliminates the dairy products from her diet for at least a month, later she can take lactate pills to prevent getting sick from dairy. This is going to be a long month.

Catalina ha sido diagnosticada con intolerancia a la lactosa, lo que rompió su corazón porque a ella le encanta el queso (especialmente los quesos gourmet), la crema, el helado y el yogourt. La doctora recomendó que Catalina no consuma ningún producto lácteo por lo menos durante un mes, después del cual ela puede tomar unas pastillas que le permitirán digerir los lácteos, pero de todos modos no podrá consumirlos muy seguido. Éste va a ser un mes muy largo.

Few weeks ago we visited Drumheller, we love the dinosaur environment of this special area of the country. The first place we visited was the Royal Tyrrell Museum, we love the displays and the many dinosaur exhibit.

Hace algunas semanas visitamos Drumheller, nos encanta el ambiente de dinosaurios en esta área especial del país. El primer lugar que visitamos fué el museo Tyrrell, nos encantan las exposiciones que el museo presenta.

We also walked around the town, visited the very nice souvenir stores (where you can buy fossiles such as dinosaur heads, eggs, teeth, etc) and stopped by the lookout to admire the special geography of the area. It was a special day for us and we had lots of fun.

También caminamos un poco en el pueblo y visitamos las tiendas de recuerdos (donde puedes comprar piezas fósiles de dinosaurios, huevos, dientes, cabezas, etc) y paramos en el mirador para admirar la geografía tan especial de este lugar. Fue un día especial para nosotros y nos divertimos mucho.

Mexico has several types of tamales; pretty much every Region has its own style. Mamita knows how to make several kinds from the South of the Country and to celebrate papito’s birthday (before the surprise party), mamita prepared two different kinds of tamales, the ranch ones and the Chiapas ones (papito is from Chiapas, so all the family was looking forward to these tamales). We helped and here is the process for the ranch tamales:

Mexico tiene muchos tipos de tamales; casi cada región tiene su propio estilo. Mamita sabe como preparar varios tipos de tamales del sur del país y para celebrar el cumpleaños de papito (antes de la fiesta sorpresa), mamita preparó dos tipos diferentes de tamales, rancheros y Chiapanecos (papito es de Chiapas, así que toda la familia esperaba comer de este tipo de tamales). Ayudamos a prepararlos y aquí está el proceso para los tamales rancheros:

The banana leaves (used to wrap these tamales) are cut in pieces appropriate to wrap each tamal / Las hojas de plátano (que se usan para envolver este tipo de tameles) se cortan en tamaños apropiados para envolver cada tamal.

Once cut, the leaves must be cooked to make them soft and easy to manipulate. We cook them directly on top of the fire / Una vez cortadas, las hojas deben cocerse para hacerlas suaves y fáciles de manipular. Las cocinamos directamente en el fuego.

The dough (prepared by mixing corn flour with chicken broth, salt and shortening) is placed on the bottom. / La masa (preparada mezclando harina de maíz con caldo de pollo, sal y manteca vegetal) se coloca primero.

Chicken (cooked and separated) and salsa (prepared by Paul by mixing chilli peppers and tomatoes) are next / El pollo (cocido y deshebrado) y la salsa (preparada por Paul mezclando chiles y jitomates) se colocan a continuación.

The secret of these tamales is a leave called, momo or holy leave which has a very good taste (somewhat similar to mint) and provides the special taste to the tamales./ El secreto de estos tamales es una hierba llamada momo o hierba santa, la cual tien un sabor muy especial (de algún modo similar al sabor de la menta) y da el sabor especial a los tamales.

Then you wrap the tamales and steam them / Después se envuelven los tamales y se cuecen al vapor.

The “Quinta Schmoll” is located 29 km north of Tequisquiapan, in the town of Cadereyta. This beautiful botanical garden is dedicated to the reproduction of cactus and succulent plants and is one of the largest in Latin America (with over 4,400 varieties of cactus), known internationally.

La Quinta Schmoll se encuentra a 29 km al norte de Tequisquiapan, en el pueblo de Cadereyta. Este hermoso jardín botánico está dedicado a la reproducción de cactáceas y plantas suculentas y es uno de los más grandes en Latinoamérica (con más de 4,400 variedades de cactus), conocido internacionalmente.

We were able to enjoy a guided visit through the greenhouse, for less than a dollar per person (10 pesos); the entrance fee also included the gift of a plant per person. We are not allowed to bring plants to Canada, but they gave us seeds and when we passed through customs we declared and showed the seeds and the officer allowed us to bring them, so we will soon be planting cactus.

Pudimos disfrutar de una visita guiada por menos de un dólar por persona (10 pesos); la entrada también incluyó el obsequio de una planta por persona. No se nos permite traer plantas a Canadá, pero nos dieron semillas y cuando pasamos por aduanas declaramos y mostramos las semillas y el oficial nos permitió traerlas, así que pronto estaremos sembrando cactus.

These are the “old men”, one of the most attractive species in this botanical garden. They live up to 500 years (but have the white hair since they are babies) and flower only once, when they are approximately 300 years old, and that is when they reproduce.

Yes, again. We just came back from a last minute trip to Mexico. Papito (Catalina's dad) turned 70 last week and a surprise party was organized by Mamita, Dea, Catalina, and our aunt Lupita, one of papito's sisters.

Si, otra vez. Acabamos de regresar de un viaje de último minuto a México. Papito (el papá de Catalina) cumplió 70 años la semana pasada y una fiesta sorpresa fué organizada por Mamita, Dea, Catalina, y nuestra tía Lupita, una de las hermanas de papito.

We spent 10 days in México and enjoyed great weather, food, and mainly, family. We celebrated with members of the Bonilla family that we don't see often. Came back to winterland (Canada) very tired, but very happy.

After a nice meal at Jenny's on one side of the city, and after racing up to Blake's for the night in the northern part, we zoomed down to the southwest to be with Paul and Catalina for an equally nice meal with Amy as chief cook.

The Texolo waterfalls are located less than 20 km from Xalapa. The falls are located in the middle of a semi-jungle, near a town called Xico, famous for its sweet mole (which we enjoyed after visiting the falls), its coffee, and its fruit liquors.

Las cascadas de Texolo se encuentran a menos de 20 kilómetros de Xalapa. Localizadas a media semi-jungla, cerca de un pueblo llamado Xico, famoso por su mole dulce (el cual disfrutamos después de visitar las cascadas), su café y sus licores de frutas.

The falls are surrounded by forests of banana trees and coffee bushes, among other plants. We were able to see hundreds of “88” butterflies, as Catalina calls them because they seem to have a number 88 on the inside of each wing. The outside of the wings is black with a bluish/green line.

Las cascadas están rodeadas de plantas de plátano y café, entro otras. Vimos cientos de mariposas “88”, como las llama Catalina puesto que parecen tener un número 88 en el lado interno de cada ala. El lado externo es negro con una línea verde-azulada.

Staying in Xalapa has many advantages, one of them is the opportunity to visit different places located in the area. The beach is one of or favourites. Chachalacas is a nice beach, not very touristy and visited mainly by locals. Since we went there during the week, we were the only ones at the beach and spent a great day, ate fresh seafood and played with the sand.

While we playing with the sand, a fish fell from the sky and started moving. We noticed that a group of seagulls was flying above us, so probably the fish came from the mouth of one of them and was lucky enough to be rescued and put back in the ocean. It was an exciting moment.

Tiene muchas ventajas el hospedarse en Xalapa, una de ellas es la oportunidad de visitar diferentes lugares localizados en la cercanía. La playa es uno de esos lugares. Chachalacas es una playa linda, no muy turística y visitada principalmente por los lugareños. Ya que fuimos entre semana fuimos los únicos en la playa ya pasamos un día padrísimo, comimos mariscos frescos y jugamos en la playa.

Mientras jugábamos en la arena, un pez cayó del cielo y empezó a coletear. Notamos que una bandada de gaviotas estaba volando encima de nosotros, así que probablemente el pez cayó del pico de alguna de ellas y tuvo la suerte de ser rescatado y puesto de vuelta en el mar. Fue un momento emocionante.

Actopan, Veracruz

Actopan is a small village located around 50 km from Xalapa, in the route to the coast.
This place is much known for its main agricultural activity: mango. This is the place where most of the mangos come from. Actopan is also known for the beautiful and clean Actopan river, where kayaking is very popular.

We spent a day in Actopan; Catalina wanted to show Paul the mango fields. Unfortunately the mango season is not until May, so we didn’t see any mangos, but Paul experienced the coastal climate and had the opportunity to enjoy lunch at an outdoors restaurant, located beside the river, under mango trees. The main dish in this place is a kind of prawn (which is between shrimp and lobster) captured at the river. There is also an area with swimming pools, where Carlos, Bella, and Dea spent some time cooling down.

Actopan es un pueblo localizado a unos 50 km de Xalapa, camino a la costa.

Este lugar es famoso por su principal actividad agricultural: el mango. De aquí provienen muchos de los mangos que comemos en México. Actopan es también conocido por el hermoso y limpio río de Actopan, donde se practica mucho el kayaking.

Pasamos un día en Actopan; Catalina quería mostrarle a Paul las huertas de mango. Desafortunadamente la temporada de mango no empieza hasta Mayo, así que no vimos ningún mango, pero Paul experimentó el clima de la costa y tuvo la oportunidad de disfrutar una comida en un restaurante al aire libre, localizado junto al río, bajo los árboles de mango. El platillo principal de ese lugar son los langostinos, provenientes del río Actopan. También hay un área con albercas, donde Carlos, Bella y Dea pasaron un rato refrescándose.

Xalapa, Veracruz

Xalapa (or Jalapa) is the capital city of the State of Veracruz, located in the central East of the country, approximately 350 kilometres from Mexico City (and only around 40 km from the beach). The city's nickname is "The City of Flowers”, for its beautiful vegetation and colourful flowers (as a result of its semi-humid climate).

Due to its ideal climate and geography, Xalapa is one of the most important places for coffee production in Mexico. Xalapa is also the birthplace of the Jalapeño peppers.

Catalina and her family lived in Xalapa during her senior High School years and have many memories of that beautiful place. So this time we decided going to Xalapa with Catalina’s parents, Dea, and kids, and spent several days exploring the city and surroundings.

Xalapa (o Jalapa) es la capital del Estado de Veracruz, localizada en el centro-Oriente del país, aproximadamente 350 kilómetros de la Ciudad de México (y a solo 40 km de la playa). Se le conoce como "La Ciudad de las Flores" por su hermosa vegetación y coloridas flores (el clima es semi-húmedo).

Debido a su clima ideal y geografía , Xalapa es uno de los lugares más importantes para el cultivo del café en México. Xalapa es también el lugar de origen del chile Jalapeño.

Catalina y su familia vivieron en Xalapa durante el tiempo en que ella estudió la preparatoria y tienen muchas hermosos recuerdos de este lugar. Así que esta vez decidimos visitar Xalapa con la familia de Catalina y pasamos varios días explorando la ciudad y sus alrededores.

Tequisquiapan

This was the first time we were able to fly directly from Calgary to Mexico City (Mexicana airlines is now offering several flights in that route). Once in Mexico City, we took a bus to Tequisquiapan (Tequis), where Catalina’s parents, sister Dea, and Dea’s children live.

Tequisquiapan is a very small town, located in the State of Queretaro, central Mexico. It’s very well known for its thermal spring waters (several hotels have their own springs, and when we celebrated our wedding there, we spent our wedding night at a suite with its own spring inside). Tequis is also famous for being the centre of a wine and cheese producing region (an annual wine and cheese fair takes place every May).

We spent some days in Tequis before leaving for the Gulf of Mexico, which we'll describe later. Here are some pictures of the town.

Esta fue la primera vez que pudimos volar directamente de Calgary a la Ciudad de México (Mexicana ya está ofreciendo varios vuelos en esa ruta). Una vez en la Ciudad de México tomamos un camión a Tequisquiapan (Tequis), donde viven los papás de Catalina, su hermana Dea y los niños de Dea.

Tequis es un pueblo pequeño, localizado en el Estado de Querétaro, en el centro del país. Es muy conocido por sus aguas termales (varios hoteles tienen sus propias aguas termales y cuando celebramos nuestra boda ahí, pasamos la noche de bodas en una suite que tenía su propia poza). Tequis también es famosa por ser el centro de una región productora de queso y vino (una feria anual del Queso y el Vino se celebra cada mes de mayo).

Pasamos unos días en Tequis antes de irnos al Golfo de México, de lo cual hablaremos más tarde. Aquí hay algunas fotos de este pueblo.

Yes, we came back over a week ago and hadn't been able to update our blog until now. We enjoyed two weeks of warm weather, beautiful places, great food and especially, spending time with our family in Mexico. It was great and now we are looking forward to going back to Mexico. Last month we were very busy and we did not update our blog at all. Now we want to take some time to summarize the highlights of the month.

September started with the Labour Day weekend. Our tradition is going to Heritage Park every Labour Day to remember the simple life of the early days of this wonderful country, and this year was not the exception, we spent the day at the Calgary of the past and had a relaxing, fun day.

El mes pasado estuvimos muy ocupados y no pudimos actualizar nuestro blog, pero ahora queremos dedicar un poco de tiempo a resumir las partes importantes del mes.

Septiembre empezó con el puente del Día del Trabajo. Nuestra tradición es ir al parque Heritage cada Día del Trabajo para recordar la vida simple de los primeros días de este hermoso país, y este año no fue la excepción, pasamos el día en la Calgary del pasado y tuvimos un día divertido y relajante.

While the world was wrapping up the Olympic Games in China, the First Alliance Church (where Paul works) started the new season with an Olympic theme: “Get in the Games”, inviting its members to be part of the church (volunteering). An original Olympic flame was used for the opening service, from the Winter Olympics that took place in Calgary in 1988 and the whole service was amazingly done. Several people came forward after the service to offer their talents and time to serve at the Church.

Mientras el mundo estaba concluyendo la celebración de las Olimpiadas en China, la iglesia de la Primera Alianza (donde trabaja Paul) empezó el nuevo ciclo con un tema olímpico “Participa en los Juegos”, invitando a sus miembros a formar parte de la iglesia (como voluntarios). Un pebetero olímpico original se usó durante el servicio, proveniente de los Juegos Olímpicos de Invierno que tuvieron lugar en Calgary en 1988 y el servicio estuvo muy impresionante y bien hecho. Como resultado muchas personas ofrecieron su tiempo y su talento para servir como voluntarios en la iglesia.

On September 16, Mexico celebrated the 198 anniversary of its independence from Spain. Just before the dawn of that day in 1810, Miguel Hidalgo, a Roman Catholic priest, rang the bells of his church (located in the village of Dolores). Parishioners expected to hear mass but instead they heard a call to arms. The famous “Cry of Dolores” or “Cry of Independence” in which Hidalgo demanded independence was first pronounced there. Hidalgo called on his people to force out all foreign invaders and rulers so that Mexicans would govern their own country.

As every year since then, this year, Mexicans celebrated that night all over the world and the Consulate of Mexico in Calgary organized a very nice party to celebrate. Hundreds of Mexicans attended and this was the first year that we participated. Authentic food, music and dance were the highlights of that night, which is called “Mexican night” or “The night of the cry”. Everybody participated in the ceremony of re-enacting the Cry of Dolores and the music of Mariachis and typical dancers made Catalina cry of homesickness. It was a very special night but a little confusing night for Paul.

El 16 de Septiembre, México celebró el 198 aniversario de su independencia de España. En las primeras horas de ese día en 1810, Miguel Hidalgo, un cura católico hizo sonar las campanas de su iglesia en Dolores. Los parroquianos esperaban escuchar misa pero en lugar de ello, escucharon un llamado a tomar las armas. El famoso grito de Dolores o Grito de la Independencia, en el cual Hidalgo exigía independencia fue pronunciado ahí por primera vez. Hidalgo convocó a su gente a sacar a los invasores extranjeros que regían el país para que los Mexicanos pudieran gobernar su propio país.

Como cada año desde entonces, este año los mexicanos celebraron esa noche en todo el mundo y el Consulado de México en Calgary organizó una fiesta muy padre para celebrar. Cientos de mexicanos acudieron y éste fue el primer año que nosotros participamos. Comida, música y bailes folklóricos auténticos fueron la mejor parte de la noche. Todos participamos en la ceremonia del grito y la música de mariachis y los bailes típicos hicieron que Catalina llorara de nostalgia. Fue una noche especial aunque un poco confusa para Paul.

September 16th is also a very important day for Blake and Karen. They celebrated their second wedding anniversary. We had the chance to go out with them several days after, and enjoyed a very nice dinner at the River Café.

El 16 de Septiembre es también una fecha muy especial para Blake y Karen. Ellos celebraron su segundo aniversario de bodas. Tuvimos la oportunidad de salir con ellos unos días después del aniversario y disfrutamos una cena muy agradable en el River Café.

The strongest event of this month, and maybe of the whole year was on September 13, our nephew Carlos’ birthday. Our family in Mexico (papito, mamita, our sister Dea and her children Carlos and Bella) went to Queretaro to celebrate and on their way back to Tequis they had a horrible yet blessed accident: while they were driving on the highway, on the top of a 4 lane bridge, a trailer hit their car on the back side and made it turn and end up in the opposite side of the highway, about 40 centimetres from the edge of the bridge.

Have they displaced those 40 centimetres, they would have been killed, all of them, at once. But only because God is good and merciful, He spared their lives and they are all doing well. Dea got a bruise in her cheek where Bella’s head hit her, and Dea also had to wear a neck collar for few days. Other than that, not a single scratch! We are so thankful with God for saving them, we think about what could have happen and we can only thank our precious God for His protection and love. We testify that He is good and He holds us in the palm of His hand. He reigns! Thank you Lord!

El evento más fuerte del mes, y quizás del año completo, tuvo lugar el 13 de Septiembre, el día del cumpleaños de nuestro sobrino Carlos. Nuestra familia en México (papito, mamita, nuestra hermana Dea y sus hijos Carlos y Bella) fueron a celebrar a Querétaro y en el camino de regreso a Tequis tuvieron un horrible pero bendito accidente: mientras iban en la carretera, arriba de un puente un tráiler golpeó su carro en la parte de atrás y los hizo girar y terminaron en el lado opuesto del puente, a unos 40 centímetros de la orilla del puente.

Si se hubieran desplazado esos 40 centímetros, hubieran caído del puente y se hubieran matado todos. Pero solo porque Dios es bueno y piadoso, protegió sus vidas y ellos están bien. A Dea le salió un moretón en la mejilla en el lugar donde la cabeza de Bella le pegó, y también Dea tuvo que usar un collarín por unos días. Fuera de eso, ¡ni un solo rasguño! Estamos tan agradecidos con Dios por salvarlos, pensamos en lo que pudo haber pasado y no podemos más que agradecer a nuestro precioso Dios por Su protección y amor. Parish Picnic 2008 / El Picnic de la Parroquia, 2008

For the third consecutive year, last weekend we participated at the St. Michael’s Parish Picnic. This time we were able to fully enjoy it, with Paul not having to coordinate the sound, we were able to sit together during mass and then enjoy lunch and the facilities of the Our Lady of Peace Ranch.

Por tercer año consecutivo, el fin de semana pasado participamos en el Picnic de la Parroquia de San Miguel. Esta vez, pudimos disfrutarlo completamente, con Paul libre de tener que coordinar el sonido y otras actividades, pudimos sentarnos juntos durante la misa y disfrutamos la comida y las instalaciones del Rancho de Nuestra Señora de la Paz.

As we informed previously, this place is used by children that don’t have resources to enjoy other summer camp facilities and graciously offered to St. Michael’s church every year.

Como informamos anteriormente, este lugar fue creado para niños que no tienen los recursos para disfrutar otras instalaciones de verano y cada año la iglesia de San Miguel tiene la oportunidad de usar estas instalaciones para la misa al aire libre y el picnic.

This year we went horse back riding, paddling on the lake (with our friends, the twins and our new Venezuelan friends), and ate tons of popcorn, cotton candy, and ice cream. It was a very nice day. Here are some pictures.

Este año fuimos a montar a caballo, a remar en el lago (con nuestras amigas gemelas y nuestras nuevas amigas Venezolanas) y también comimos muchas palomitas de maíz, algodón de azúcar, y helado. Fue un día hermoso. Aquí hay algunas fotos.

7 years in Tibet / 7 años en el Tíbet

Well…not really, but feels like it (weather wise). Today Catalina is celebrating her seven years in Canada. When she left that day to the airport, leaving her family and the comfort of home in Mexico, she told to herself and to her family “it's only for two years and then I'll be back.”

Bueno…no exactamente, pero es como si lo fuera (por el clima). Hoy Catalina está celebrando 7 años en Canadá. Cuando salió de México ese día, dejando a su familia y el confort de su hogar, se dijo a sí misma “es sólo por dos años y después regresaré”.

With one large suitcase full of books, and papito’s laptop, she came to Canada to study for her Masters degree and was picked up at the airport in Toronto by her friend Mariana (they hardly knew each other by then), knowing nothing about the changes that God had prepared for her. She knew nothing about the horrific attack that, less than a month after her departure, took place in New York and thus transformed everything.

Con una maleta enorme llena de libros y con la laptop de papito, llegó a Canadá a estudiar su maestría y su amiga Mariana la recogió en el aeropuerto de Toronto (ella y Mariana apenas y se conocían para entonces), sin saber los cambios que Dios había preparado para su vida; sin saber que un horrendo ataque tendría lugar en Nueva York a menos de un mes de su llegada a Toronto, transformándolo todo.

While she was packing her suitcase the night before her departure, her nephew Carlos Andrés (3 years old by then) put on a big sweater, rolled a scarf around his neck and told her he was ready to go with her to that cold country (little did he know that you need much more than that to stay warm during the winter). It was difficult for her, because she loves Carlos (and Bella) and they were very close together, almost as if they were her own children.

Mientras ella empacaba su maleta la noche antes de partir, su sobrino Carlos Andrés (que entonces tenía 3 años) se puso un suéter grande, se envolvió una bufanda en el cuello y le dijo que estaba listo para irse con ella a ese frío país (no sabíamos que en este lugar se necesita mucho más que eso para mantenerse caliente durante el invierno). Fue difícil para ella porque ella ama a Carlos (y a Bella) casi como si fueran sus propios hijos y ellos estaban muy apegados a ella.

Today, seven years later, she finds herself still in Canada and is now married to a Canadian. She has become a Permanent Resident, has a good job, is surrounded by great friends (and a great new family, the Nadeaus), and belongs to a great Catholic Community. We still want to bring her family to Canada, so we can all be together, and we pray that God will grant us that desire. We also pray that He will allow us to grow as husband and wife, for His glory.

Hoy, siete años después, se encuentra casada con un canadiense. Ahora ella es residente permanente de Canadá, con un buen trabajo, rodeada de buenos amigos (y una familia nueva, los Nadeaus) y perteneciendo a una comunidad Católica hermosa. Queremos traernos a su familia a Canadá para que estemos todos juntos y oramos pidiendo a Dios que nos conceda ese deseo y que nos permita crecer como pareja, para Su gloria.

Would we (not only her) move to Mexico one day? We don’t know, it's not in our plans. But we don’t want to do our will, but God’s, and we are sure that if it is His plan for us to move, we will move. We have learned that His plans are always perfect, for we trust Him and in Him we move, we breathe, we live! Praise God! Thank you Father, for these seven years of growth and for allowing Catalina to come to Canada so we could meet and be together!

¿Nos iríamos (ahora ya no es ella sola) a vivir a México algún día? No lo sabemos, no está en nuestros planes, pero no queremos hacer nuestra voluntad sino la de Dios, y estamos seguros de que si en Sus planes hay algún cambio, nos cambiaremos. Aprendimos que Sus planes son siempre perfectos y con un final felíz. Confiamos en Él y en Él nos movemos, respiramos, y vivimos. ¡Bendito sea Dios! ¡Gracias Padre, por estos 7 años de crecimiento y por permitir que Catalina viniera a Canadá y así podernos encontrar y estar juntos!

We did not finish our series about Toronto, but we decided to move on. We have been very busy this summer, and we apologize for not updating our blog for so long.

No terminamos nuestra serie sobre Toronto, pero decidimos brincarnos esa información. Hemos estado muy ocupados durante el verano, y nos disculpamos por no mantener nuestro blog actualizado.

Last Monday we visited Red Deer to meet mom and dad (Paul’s parents, David and Georgine). Besides spending time with them, the highlight of the trip was the gardens at City Hall. During summer, the City invests a lot of money and effort arranging an amazing garden. We loved the flowers and decided showing you some of the flowers we enjoyed.

El lunes pasado fué festivo, y aprovechamos para visitar la ciudad de Red Deer para reunirnos con los papás de Paul (David y Georgine). Además de pasar un tiempo con ellos, lo más bonito del viaje fue la visita a la oficina de gobierno de la ciudad. Durante el verano, la ciudad invierte mucho dinero y esfuerzo arreglando un jardín hermosísimo. Nos encantaron las flores y decidimos mostrar a ustedes algunas de las flores que disfrutamos.
